Grapes: 50% Negroamaro, 25% Cabernet Sauvignon, 25% Merlot

Vineyards location: Guagnano (Lecce) and San Pietro Vernotico (Brindisi)

Extension:

Orientation: north-south (Guagnano); est-west (San Pietro Vernotico)

Altitude: 1200 ft.

Vine training: bush vines (negroamaro), spur pruned cordon (Cabernet, Montepulciano)

Soil: Calcareous, Siliceous, Clay

Total production (btls): 80,000

Vinification: Negroamaro and Cabernet grapes are harvested in mid-September, Montepulciano grapes at the beginning of October. After the maceration period the grapes undergo daily délestage and the juices are in contact with the skins for no more that 6 days. The temperature is controlled between 78-80 F. Malolactic fermentation is then carried out.

Ageing: In barriques for 8 months.
