Soil: clay, calcareous

Total production (btls): 60,000 bottles

Vinification: Hand harvested in wooden crates. Maceration on the skins in stainless steel vats for 10 days. Alcoholic fermentation in stainless steel at controlled temperature (68-82F). Malolactic fermentation is carried out for 7 days in wooden barrels of different size and age.

Ageing: 20% aged in new French barriques, 40% aged in used barriques (2nd passage) and the remaining 40% is aged in Tonneaux, all for 6 to 8 months.
